Ingredients

  • 1-2 tsp olive oil, for sautéing (you can use water, too)
  • ½ yellow onion, small dice
  • ½ bell pepper (red or green), small dice
  • 1 tbsp chili powder
  • 3 cups cooked pinto beans
  • 1½ cups rich vegetable broth
  • Healthy dose of salt and pepper, to taste
  • Optional: Garlic/garlic powder; jalapeño; cumin, paprika or any of your favorite spice blends.
