Ingredients
- 1-2 tsp olive oil, for sautéing (you can use water, too)
- ½ yellow onion, small dice
- ½ bell pepper (red or green), small dice
- 1 tbsp chili powder
- 3 cups cooked pinto beans
- 1½ cups rich vegetable broth
- Healthy dose of salt and pepper, to taste
- Optional: Garlic/garlic powder; jalapeño; cumin, paprika or any of your favorite spice blends.
