For the Curry Sauce
  1. 2 tablespoons canola oil
  2. 1 large onion, diced
  3. 5 cloves garlic, minced
  4. 2 medium carrots, diced
  5. 2 tablespoons all-purpose flour
  6. 4 teaspoons curry powder
  7. 2 ½ chicken broth
  8. 4 teaspoons soy sauce
  9. 2 teaspoons honey
  10. 1 teaspoon garam masala
For the Chicken
  1. 3 cups panko breadcrumbs
  2. 3 boneless, skinless chicken breasts
  3. 1 cup all-purpose flour
  4. salt and pepper
  5. 2 eggs
