Loaded Mashed Cauliflower

Healthier take on loaded mashed potatoes!

  • 1 head cauliflower (about 4.5-5 cups, cut into florets)
  • 5 slices bacon
  • 4 cloves garlic (minced)
  • 1/4 cup milk
  • 1 tbsp butter
  • 2 tbsps reduced-fat sour cream
  • black pepper
  • kosher salt
  • 1 bunch chives (chopped)
  • 1/2 cup reduced fat cheddar cheese (shredded)
