I’ve got tunnel vision for this cake – I. Just. Can’t. Look. Away!!!

Cream Cheese Tunnel
- 8 ounces cream cheese, softened
- 1 large egg
- 1/4 cup granulated sugar
Cake
- 3 large eggs
- 1 3/4 cups granulated sugar
- 1 cup canola or vegetable oil
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 2 to 3 teaspoons cinnamon
- 1 teaspoon allspice
- 1 teaspoon ground ginger,
- 1 teaspoon baking powder
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon ground cloves
- 1/4 teaspoon baking soda
- 2 cups coarsely grated apples, peeled (I used 1 Fuji and 1 Granny Smith)
- 1 cup coarsely grated carrots, peeled (from about 1 extra large carrot)
Cream Cheese Frosting
- 6 ounces cream cheese, softened
- 1/4 cup (half of 1 stick) unsalted butter, softened
- 1 1/2 cups confectioners’ sugar
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon salt, or to taste
- cinnamon, for garnishing
