Ingredients
- • 1 banana, mashed
- • 1 egg
- • 1 tsp vanilla
- • 3 tbsp maple syrup (or honey)
- • 1/3 cup creamy almond butter
- • 1/2 cup nut milk
- • 1 cup rolled oatmeal
- • 1 1/2 cup oat flour (you can make your own by blending rolled oats)
- • 1 tsp baking powder
- • pinch of salt
- Cinnamon Sugar Filling:
- • 1 tsp cinnamon
- • 1 tbsp coconut sugar
- Glaze:
- • 1/2 tsp vanilla
- • 1/2 tsp cinnamon
- • 2 tbsp maple syrup
- • 3 tbsp coconut butter, melted (or more almond butter)

These would be PERFECT for a color themed dinner!

- 1 cup all-purpose flour
- 1 cup whole-wheat flour
- ¾ cup sugar
- 2 tsp baking powder
- ½ tsp baking soda
- 1½ tsp ground cinnamon
- ½ tsp salt
- ¼ cup canola oil
- ¾ cup milk
- 1 (6 ounce) bag fresh baby spinach
- ½ cup mashed banana (from about 2 bananas)
- 2 tsp pure vanilla extract

- 3/4 cup unsweetened oat milk or non-dairy milk
- Any toppings of your choice – like a drizzle of vegan yogurt, more cinnamon, and some pecans for crunch
