Chicken Parm Soup

If you love Chicken Parmesan – and you love soup – You are gonna LOVE this combo!

  • 2 tbsp. extra-virgin olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 3 tbsp. tomato paste
  • 1 tsp. crushed red pepper flakes
  • 1 15-oz can diced tomatoes
  • 4 c. low-sodium chicken broth
  • 1 lb. boneless skinless chicken breasts, cut into 1″ chunks
  • 8 oz. penne
  • 1 1/2 c. shredded Parmesan
  • 1/2 c. shredded mozzarella
  • Coarse salt
  • Freshly ground black pepper
  • Fresh parsley, for garnish

Tuscan Soup

Love this hearty soup – You gotta try it!

  • 2 tbs. olive oil
  • 1 garlic clove, minced
  • 1 onion, finely chopped
  • 3 carrots, sliced
  • 4 stalks of celery, sliced
  • 3 tbs. tomato sauce
  • 6 cups chicken broth
  • 2 cups cooked cannellini beans
  • 2 cups baby kale
  • 1 cup small whole grain pasta
  • Salt and pepper, to taste
  • Parmesan cheese for garnish

Braided Bread Wreath Centerpiece

You won’t have to worry about packing this away at the end of the season – you’re guests will eat it up!

  • 15 oz bread flour
  • 9.75 oz cool water
  • 1 Tablespoon sugar
  • 1½ Tablespoons extra virgin olive oil
  • 1¼ teaspoon kosher salt
  • 2 teaspoons active dry yeast
  • 2 teaspoons poultry seasoning (get the coarser kind that looks like tiny flakes–not the ground kind–if you can find it)
For Coloring the Leaves
  • ½ teaspoon turmeric (for yellow leaves)
  • ½ teaspoon paprika (for orange leaves)
  • 1 egg beaten with 1 teaspoon water for egg wash
  • optional rosemary sprigs for “pine boughs”
