- 1/2 cup all-purpose flour
- 1/2 cup yellow cornmeal
- 2 tablespoons sugar
- 2 teaspoons baking powder

- 1/2 cup milk

- 1/4 c. butter

Wowzers! I love the color of this dish.

- 800 g wild salmon fillet, skin on, de-boned
- Beet Cure:
- 2 large red beets, peeled and quartered
- 2 lemons, zested
- 6 Tbsp rock salt
- 2 Tbsp demerara sugar
- ¼ cup gin or vodka
- Herb Cure:
- 1 small bunch fresh dill, finely chopped
- 1 small bunch fresh tarragon, finely chopped
- 4 Tbsp horseradish root, grated
- ¼ cup gin

These are so colorful and yummy!
- ½ cup of olive oil
- 3 tablespoons of Worcestershire sauce
- ⅓ cup of lime juice
- ½ teaspoon of Red pepper flakes (optional)
- 1 tablespoon of Cumin
- 3 cloves of Garlic, minced
- 1 tablespoon of Chili Powder
- 1 tablespoon of sugar
- 1 teaspoon of Salt
- ½ teaspoon freshly ground black pepper
- 2 pounds of grilling steak (flank steak, strip steak, filet mignon, etc)
