Christmas Soup

A warm, filling queso style soup with bits of RED and GREEN!

  • 1 14.5 oz can Italian stewed tomatoes
  • 1 10 oz can Rotel Original tomatoes and green chilies
  • 4 cup vegetable stock or chicken stock
  • 1 cup sour cream
  • 1 Tbsp fresh basil finely chopped
  • 1 lb Velveeta cheese sliced into 1-inch slices
  • 1 12 oz box tricolor spiral shaped pasta, cooked al dente according to package directions
  • scoops tortilla chips, optional
  • crushed red pepper flakes sprinkle on top, optional

One Skillet Mexican Beef and Rice

Easy week-night dinner!

INGREDIENTS

  • 1/2 onion, diced
  • 1 lb. ground beef
  • 1/4 cup taco seasoning (1 or 2 of the packets)
  • 1 (14oz) can diced tomatoes, undrained
  • 1 cup fire roasted corn kernels, drained
  • 3/4 cups white long grain rice, uncooked
  • 2 cups beef broth
  • 1 1/2 cup shredded colby jack cheese

Taco toppings:

  • Sour Cream
  • Diced Avocado
  • Sliced Black Olives
  • Chopped Cilantro
  • Salsa

Turkey Noodle Soup

Use up that leftover turkey!

  • 2 cups turkey cooked, chopped
  • 1/2 medium onion finely diced
  • 2 large carrots peeled and diced
  • 1 rib celery sliced
  • 1 teaspoon salt

  • 1/4 teaspoon dried thyme
