Strawberry Pistachio Sugar Cookies

Cookies
  • 1 cup (2 sticks) unsalted butter, softened to room temperature
  • 1 cup granulated sugar
  • 1 large egg yolk
  • ½ tsp vanilla extract
  • 2 cups all purpose flour
  • ½ tsp salt
  • ½ cup freeze dried strawberries ground into fine powder
  • 1/4-1/2 cup chopped pistachios
Glaze
  • 1 cup powdered sugar
  • ¼ cup milk
  • Pink food coloring optional – I used Wilton’s pink gel color
Garnish
  • Additional freeze dried strawberries and pistachios

  • Coboo Yarn (lightweight level 3) in “Pink” (~22 g), “”White” (~11 g) and Silver” (~9 g)
  • 2.75 mm Clover Amour Hook
  • Yarn needle (bent tip is helpful)
  • fiberfill
  • 9 mm safety eyes
  • brown embroidery floss
  • pink felt (for ears and snout)
  • glue gun
