- 1 c. uncooked white rice
- 2 tbsp. olive oil
- ½ yellow onion
- 3 cloves garlic, minced
- 2 tsp. tomato/chicken bullion
- 1 tsp. cumin
- 1 tsp. chili powder
- ¼ tsp. paprika
- ¼ tsp. black pepper
- ½ (14.5oz) can diced fire roasted tomatoes with green chilies
- ½ (8oz) can tomato sauce
- 1 (14.5oz) can low sodium chicken broth
