Cowboy ‘Caviar’

Delicious salsa-type dish to serve with tortilla chips!

147-300x300Ingredients 2 cans (15 oz) black beans, rinsed and drained 1 can (17 oz) can whole kernel corn, drained 2 large tomatoes, chopped 1 or 2 large avocados, peeled and diced 1/2 red onion, chopped 1/4 cup chopped fresh cilantro Dressing 1 Tbsp. red wine vinegar 3-4 Tbsp. lime juice 2 Tbsp. olive oil 1 tsp. salt 1/2 tsp. pepper Combine all ingredients in a large bowl.  Cover and chill. Garnish, if desired with additional avocado slices or cilantro sprigs, and serve with tortilla chips.

Guacamole Chicken Burgers

  • 1 lb. lean ground chicken
  • ¼ cup green onions, chopped (about 3-4)
  • ⅓ cup cilantro, chopped
  • 1-2 garlic cloves, minced
  • ½ of a lime, juiced
  • ½ cup white cheddar cheese (like Cabot Farmhouse Reserve aged cheddar cheese)
  • 1 tsp. cumin
  • ½ tsp. paprika
  • ¼ tsp. salt (or more if needed)
  • ¼ tsp. pepper
  • 2 medium avocados, smashed with a fork
  • 1 tomato, diced
  • lawry’s season salt
  • pepper
  • ¾ tsp. lime or lemon juice
  • hamburger buns, for serving
