Chicken Alfredo Roll Ups

Rich and delicious!

  • 4 tbsp. butter
  • garlic cloves, minced
  • 1/4 c. all-purpose flour
  • 2 1/2 c. milk (preferably 2% or whole)
  • 4 oz. cream cheese, softened
  • 1/2 c. freshly grated Parmesan
  • Juice of 1 lemon
  • 1 tbsp. freshly chopped parsley, plus more for garnish
  • Kosher salt
  • Freshly ground black pepper
  • 4 c. shredded rotisserie chicken
  • 12 lasagna noodles, cooked according to package directions

Oreo Acorn Balls

Fall fun treat to share (unless you eat them all yourself) Better buy enough for two batches!

  • 1 package peanut butter oreos 15.25 oz, pulsed in food processor
  • 1 package regular cream cheese 8 oz, softened
  • chocolate candiquik
  • 1 tbsp crisco, vegetable shortening
  • Brown sprinkles, I used chocolate flakes but brown jimmies work great too!
  • Pretzel sticks, broken into small pieces

Slow Cooker Jambalaya

  • 2 chicken breasts skinless, boneless, cut into chunks
  • 1 pound andouille sausage links sliced
  • 1 can diced tomatoes 28 ounces
  • 1 large onion chopped
  • 1 red bell pepper finely chopped
  • 2 stalks celery thinly sliced
  • 2 cups chicken broth
  • 1/2 teaspoon dried thyme
  • 2 teaspoons dried oregano
  • 1 tablespoon Cajun seasoning
  • 1/2 teaspoon cayenne pepper
  • 1 pound shrimp 13-15 count

Instant Pot Apple Pie Filling

My favorite thing to make in my instant pot is APPLESAUCE.. this takes it to a whole new level!

  • Juice from half of a lemon
  • 6 apples, peeled, cored and sliced into 1/4-inch pieces (use a variety of sweet and tart apples for a more complex flavor)
  • 1 cup apple cider, apple juice or water
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 4 tablespoons butter
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
