Grilled Pork Chops
I’ll be honest – pork is not one of my favorite meats… but I’d love to try this method – who’s with me?!
Ingredients
Pork Chop Brine:
- 4 bone-in thick center cut or none in
- 1/2 gallon water
- 1/2 cup kosher salt
- 1/2 cup honey
- 1 tablespoon apple cider vinegar
- 2 dried bay leaves
- 4 cloves garlic peeled and smashed
- 2 teaspoons whole black peppercorns
- 3 sprig fresh rosemary
- 1 lemon sliced
Grilled Pork Chops:
- 1/4 cup extra virgin olive oil
- 2 tablespoons honey
- 1 tablespoon lemon juice
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 2 teaspoons paprika
- 2 teaspoons salt
- 1 teaspoon black pepper

1/3 cup of bacon grease, leftover cooking grease (hardened, not warm liquid), or vegetable shortening
