Taffy

This is one part activity, one part party food. Kids will enjoy the pulling, cutting and shaping of the taffy. Guests can save their candies in waxed paper and take them home for their families.

Ingredients

1 1/4 cups sugar
1/4 cup water
2 tbsp. white vinegar
1 1/2 tsp. butter, plus extra for the pan and for coating hands
1/2 tsp. vanilla extract

Directions

Combine sugar, water, vinegar and butter in a heavy, nonreactive pan, and stir over low heat until the sugar dissolves.

Raise heat and cook quickly, about 20 minutes, without stirring, until a teaspoon of the mixture dropped into a glass of cold water forms a hard ball.

Watch the boil carefully so the taffy does not burn. Turn off heat and add the vanilla extract.

Pour the taffy onto a generously buttered platter or cookie sheet with low sides. When it is cool enough to handle (adults do everything up to this part), kids grease their hands with butter, take a lump of taffy, and pull and stretch it until it is light and slightly firm.

The more they stretch, pull and twist the candy, the more air they will blend into it, and the more like beach taffy it will get.

Using scissors, cut the lump of candy into bite-size pieces. When completely cool, wrap each piece in waxed paper.

Makes 45 1-inch candies.

Sherbet Punch

 

This is one of the easiest punch recipes I’ve seen. Hope you enjoy!
 

In a punch bowl – mix together the following:

  • 1 – 2 liter bottle of Sprite or 7UP
  • 2 cups of orange juice

top with

  • scoops of orange sherbet
  • frozen raspberries

Colorful Cone Cakes

Ice Cream Cone Cupcakes

Ever had an ice cream cone cupcake? This version has layers of colors to surprise and delight.

To make, simply mix up your favorite white cake mix. Divide the batter into smaller bowls and use food coloring to dye. (Hint: Paste food coloring gives deeper colors than regular drop liquid coloring.) Use paper cupcake liners in a muffin pan and then layer in the batter.

Ice Cream Cone Cupcakes

Before baking turn over a cone onto the top of the batter. Bake per original recipe instructions. When cool, remove paper and frost.

Cake Pops

  • Prep time 15 min.
  • Bake time 35min
  • Cool time 1 hr 30 min
  • Total time: About 3 hr
  1. 1 Package of any boxed cake mix  (Baked as directed on the box)
  2. 1/3 cup of your favorite frosting. Canned or homemade
  3. 1lb. Package of candy melts. Any color
  4. Popsicle sticks
  5. Any type of edible decorations
  6. Wax paper.

Bake cake and allow to cool completely (about one hour).

Crumble cake in large bowl and add frosting.

Put cake mixture in fridge and chill for 30 min or overnight

Shape dough into balls or press into favorite cookie cutter.

Melt candy coating according to directions on bag.

Dip end of Popsicle stick in candy melts and insert into cake ball.  Allow to harden in refrigerator for about 10 min. This will help the cake to stay on the stick.

After you take the pops out of the refrigerator allow 2-4 min before you dip into the candy melts as to prevent cracking and dry upside down. At this point you can add decorations.
