Apricot Coffee Cake

Even the kids will like this family favorite – try it!

Dough
5 1/2 to 6 1/2 cups flour
3/4 cup sugar
1 teaspoon salt
3 pkg. yeast (6 3/4 teaspoons)
1/2 cup butter, melted and cooled slightly
1 cup very warm tap water (120 degrees)
3 eggs

Apricot Filling
11 ounces dried apricots
1 1/2 cups water
1/2 cup brown sugar

Streusel
1/3 cup flour
3 tablespoons sugar
3/4 teaspoon cinnamon
3 tablespoons butter

  • 1½ pounds beef stew meat, cubed
  • 2 T. flour
  • 2 T. olive oil
  • ½ cup celery, chopped (1 stalk)
  • ½ cup carrots, chopped (2 stalks)
  • ½ t. dried thyme
  • ½ medium onion, minced
  • 3 cloves garlic, minced
  • 1½ cups beef broth
  • 1½ cups Irish stout
  • 1 14.5 oz. can Hunt’s petite diced tomatoes
  • 1 T. sugar
  • 3 T. Worcestershire sauce
  • 2 sheets puff pastry
  • 1 egg yolk
  • 1 T. water
  • Salt and pepper
  • Small mason jars
