Monster Truck Cake

To make this cake you’ll need to make 2 sheet cakes. Use whatever pans you have on hand. I’d use 9X13. On an aluminum foil wrapped board, swipe a small amount of icing to help keep the bottom layer secure.

Put board on top of cake pan and turn it over so the cake ends on the board. You can center it by hand, if it’s not too far off center.

Put a nice layer of frosting on top of bottom layer. Carefully transfer on the top layer. For the ramp, you’ll need to cut with a sharp bread knife a slit from the side center halfway down – see the pic, this is the straight line downward behind the 2 red trucks.

Then cut at an angle to make the lower ramp. Pull this triangular piece off, and lay it on the opposite side on top to make the upper ramp attaching it with some frosting of course.

For frosting the cake – use paste dyes to make the brown and green colors. I’d use a buttercream icing. Also , I’d recommend doing a ‘crumb coat’ where you do a very thin layer of icing to contain any loose crumbs. Then after that sets you can do the finish coat – much more professional look.

Use a medium star shaped tip for the shell border. The baker in the pic used a chain type or braided shell design; by doing one U shaped line, then starting in the middle of the U, and doing an upside down U shape.

Add green grass using a grass tip – it looks flat with lots of holes. It takes practice to get the grass to look uniform.

A small round tip is used for the writing on the side.

Make sure the trucks you use are new and clean!! Don’t get real dirt on the cake 🙂

I would also consider crumbling up some chocolate cookies to make it look more like dirt – your choice!

Ok, now this sounds really weird…. but they say there is a subtle cheese flavor with the cinnamon coating.. sounds interesting enough to try it!

Ingredients

  • 1 packet Betty Crocker Snickerdoodle Cookie Mix (with cinnamon sugar packet)
  • 1 stick (1/2c) butter melted
  • 1T water
  • 1egg
  • 1.5oz Cheez Doodles (Cheese Balls and Cheese Puffs are acceptable substitutes)
  • 20 to 22 Snickers minis
