Toddler Breakfast Oat Cups

I think I just designated myself a toddler again!! I can’t wait to try these cups!

  • 3 cups old fashioned oats, separated
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 2 large ripe bananas, smashed (roughly 1 cup)
  • 2 eggs
  • 1 cup almond milk (or milk of choice)
  • 1/3 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 2 teaspoons vanilla extract

Try these add-ins:

Carrot Cake – with shredded carrots, raisins and nutmeg
Antioxidant Powerhouse – with mini dark chocolate chips, raspberries and chia seeds
PB & J – with peanut butter (sunflower seed or almond butter) and your favorite jam
Almond Blueberry – with whole blueberries, slivered almonds and almond extract

Cream Cheese Avocado Bacon Bites

Oh my word! Gotta try this ASAP!!

For The Cream Cheese Avocado Bacon Filling
  • (2) 8 oz pkg cream cheese
  • 3 large avocados, diced small
  • 1 lb bacon, crisp and crumbled
  • 1 cup Sharp cheddar, shredded
  • 1 cup Pepper Jack, shredded
  • 1/2 cup diced jalapenos (I used diced jalapenos from a jar)
  • 1/2 cup green onions, sliced
  • 1/2 cup cilantro, chopped
  • 1/4 cup red onions, diced
  • 1 tsp garlic salt
  • 1/2 tsp Cajun seasoning
  • 1/2 tsp pepper
  • 1 tsp lime juice
For The Coating
  • 1 cup buttermilk
  • 1 egg
  • 1 cup flour
  • 1-2 cups Panko bread crumbs
  • 2+ cups vegetable oil

Ceiling Compass

Stain pre-made wooden letters, and 4 larger and 4 smaller wooden cut triangles (with a slight curve to match the base of your ceiling fan). Attach to ceiling as in pic – PLEASE make sure the ‘N’ actually points North 😉
