For the cookie dough:
  • 1 cup all-purpose flour
  • 1/3 cup granulated sugar
  • a pinch of salt
  • 4 oz unsalted butter (1 stick) – soften @ room temperature
  • 1 egg yolk
  • 1 teaspoon pure almond extract
  • Extra butter for baking sheet
