Delicious salsa-type dish to serve with tortilla chips!
Ingredients 2 cans (15 oz) black beans, rinsed and drained 1 can (17 oz) can whole kernel corn, drained 2 large tomatoes, chopped 1 or 2 large avocados, peeled and diced 1/2 red onion, chopped 1/4 cup chopped fresh cilantro Dressing 1 Tbsp. red wine vinegar 3-4 Tbsp. lime juice 2 Tbsp. olive oil 1 tsp. salt 1/2 tsp. pepper Combine all ingredients in a large bowl. Cover and chill. Garnish, if desired with additional avocado slices or cilantro sprigs, and serve with tortilla chips.
