Twice Baked Buffalo Chicken Sweet Potatoes

This is a flavor combination I’d never thought of – try it and see if it’ll be your family’s new favorite!

  • 2 large sweet potatoes
  • ⅓ c. non-fat plain Greek yogurt
  • ¼ c. bleu cheese crumbles
  • ⅓ c. carrots, finely diced
  • ¼ c. celery, finely diced
  • ⅓ c. yellow onion, finely diced
  • 1 c. chicken, cooked and cubed
  • ¼ c. buffalo wing sauce
  • ⅓ c. reduced fat Mexican blend shredded cheese
