French Grandmother’s Lemon Cake

  • For the cake:
  • ½ cup plain yogurt or Greek yogurt
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 ½ cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • grated lemon zest, from 1 medium-size lemon
  • ½ cup sunflower, grape seed or canola oil
  • For the glaze:
  • ¼ cup fresh lemon juice
  • ¾ cup (1 1/2 jars) of powdered sugar
