Low carb – but still delicious!

  • 1 10 oz pkg. frozen cauliflower rice
  •  5 tsp. olive oil, divided
  •  1 19.5 pkg. uncooked Italian Sausage
  •  1 lb. mushrooms, chopped
  •  1 small onion, chopped
  •  1 green pepper, chopped
  •  1 tsp. Italian Herb Blend
  •  1/2 tsp. ground fennel (see notes)
  •  salt and fresh-ground black pepper to taste
  •  2 cup grated Mozzarella cheese
