- 1 10 oz pkg. frozen cauliflower rice
- 5 tsp. olive oil, divided
- 1 19.5 pkg. uncooked Italian Sausage
- 1 lb. mushrooms, chopped
- 1 small onion, chopped
- 1 green pepper, chopped
- 1 tsp. Italian Herb Blend
- 1/2 tsp. ground fennel (see notes)
- salt and fresh-ground black pepper to taste
- 2 cup grated Mozzarella cheese
