Chicken and Rice Soup
Cure your spring fever with this soup!
- 1 tablespoon oil
- 1 onion minced
- 3 large carrots peeled and diced
- 1 stalk celery diced
- 1 teaspoon minced garlic
- 1 teaspoon dried parsley
- 1/2 teaspoon dried thyme
- 1 teaspoon salt
- 1/8 teaspoon black pepper
- 5 cups low sodium chicken broth
- 2 chicken breasts
- 1 cup brown rice
- 1 cup evaporated milk
Sausage Quiche
Easy to make, easy to serve, easy to please!
- 1 9-inch unbaked deep dish frozen pie crust (I.e. Mrs Smith’s)
- 8 oz mild or spicy breakfast sausage
- 5 green onions green onions thinly sliced
- 2 cups shredded sharp cheddar cheese divided
- 1 cup half and half
- 6 large eggs
- 1 tsp garlic salt
- 1 tsp freshly ground black pepper
- 1/2 tsp ground mustard
- few dashes hot sauce optional
