Whole Wheat Cinnamon Crunch Banana Bread

I’ve been looking for the perfect banana bread recipe – maybe THIS is it!

Wet Ingredients

  • 2 large eggs
  • 1 cup mashed bananas
  • 3/4 cup sugar
  • 1/3 cup oil
  • 1/2 cup Greek yogurt

Dry Ingredients

  • 1 3/4 cups whole wheat flour
  • 1/4 cup cornstarch or more whole wheat flour
  • 2 teaspoons cinnamon
  • 1.5 teaspoons baking powder
  • 1/4 teaspoon salt

For the Crumb Topping

  • 1/2 cup flour plain or whole wheat
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/4 cup butter

    • 6-10 slices of thick cut Bread (I suggest Brioche, Challah or French Bread)
    • Butter fot the pan if you are not using a non-stick griddle
For the Batter
  • 3 Eggs
  • 3 Egg Yolk (So yes, a total of 6 eggs)
  • 1/2 tsp Vanilla
  • 3 Tablespoon Brown Sugar
  • Dash of Nutmeg
  • Dash of Cinnamon
  • Dash of Salt
  • 1/2 cup Cream
  • 1 Tablespoon Butter

for the topping:
3/4 cup packed light brown sugar
1/2 cup self-rising flour
1/2 cup (1 stick) unsalted butter, softened
1 cup uncooked old-fashioned oats
1/2 cup chopped pecans

for the filling:
1 cup self-rising flour
1 cup sugar
1 cup Sir Bananas Bananamilk
1/2 cup (1 stick) butter, melted
4 bananas, sliced
