Cinnamon Sugar Scones

Mmmmm, cinnamon sugar is my favorite!!

  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, frozen and grated
  • 2/3 cup heavy cream or buttermilk
  • 1/3 cup sugar, plus additional for sprinkling on top
  • 2 eggs, divided
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1 1/4 teaspoon cinnamon, divided
    • Glaze: (optional)
  • 1/2 cup powdered sugar
  • 3 tablespoons milk
  • 1/8 teaspoon cinnamon

Instant Pot Apple Crisp

Yummo – got try this!

  • 8 apples small green apples are great, cored and peeled, slìced thìck or cubed
  • 1 c brown sugar
  • 1 tsp cìnnamon
  • 1/4 tsp nutmeg optìonal but good ìf you lìke that flavor
  • 1/2 tsp vanìlla extract
  • 1 c water
  • 1/2 c old fashìoned oats not ìnstant, for toppìng
  • 1/4 tsp cìnnamon for toppìng
  • 3 tbsp butter melted, for toppìng
  • 1/4 c flour for toppìng
  • 1/2 c brown sugar for toppìng

Iced Peanut Butter Bars

Just like they served back in grade school!

  • 16 TBs unsalted butter
  • 1.5 C peanut butter
  • 1.5 C granulated sugar
  • .5 C golden brown sugar, packed
  • 1.5 tsp kosher salt
  • 1 T vanilla
  • 4 eggs at room temperature
  • 2 C flour, sifted
  • 1 C confectioner’s sugar
  • .25 cup peanut butter, melted
  • Milk (amount depends on desired thickness of icing–start with a couple of tablespoons and go from there)
