Teriyaki Chicken Rice Bowls

Sun Dried Tomato Parmesan Chicken
Creamy and delicious – perfect for a small party!

For The Chicken:
- 2 large boneless and skinless chicken breasts, halved horizontally to make 4 fillets
- 2 tablespoons Tapioca flour (or all purpose or plain flour)
- 2 tablespoons finely grated fresh Parmesan cheese
- 1 teaspoon salt
- Cracked pepper
For The Sauce:
- 2 tablespoons reserved sun dried tomato oil (or olive oil)
- 2 tablespoons minced garlic
- 200g | 7oz jarred sun dried tomato strips in oil, drained (reserve 2 tablespoons of oil for cooking)
- 1 cup sliced mushrooms (250 g | 8 oz)
- 1½ cups milk (reduced fat, skim or full fat milk)
- 1 tablespoon cornstarch (cornflour) mixed with 2 tablespoons of water
- ⅓ cup fresh grated Parmesan cheese
- 2 tablespoons fresh shredded basil, to serve
BBQ Chicken Tostadas
This is a different combination to give your taste buds a tingle!!

- 8 tostada shells
- 3 cups cooked and shredded chicken
- 1½ cups of your favorite barbecue sauce, divided
- 2 cups shredded cheese
- 3 green onions, very thinly sliced
Beef and Macaroni Chili
…or simply “Chili Mac” – Truly my favorite dinner and even better (if that’s possible) as leftovers!

- 1 cup macaroni, uncooked
- 1/2 pound ground beef
- 1/2 teaspoon garlic powder
- 1 teaspoon chili powder
- 1 pinch salt
- 1 pinch pepper
- 1 can tomato soup
- 1 ounce Mozzarella cheese
