Combine the fun and spiciness of a jalapeno popper with a dinner standard!

1/2 cup panko
2 tsp. canola oil
1.5 – 2 tsp. taco seasoning or mixture in notes*
1 egg
2 oz. reduced fat cream cheese
1/4 cup shredded cheddar cheese
1-2 jalapeño peppers, seeds and ribs removed, minced
2 chicken breasts

- 1 tablespoon extra-virgin olive oil
- 1 tablespoon butter
- 1 cup white rice
- Approximately 1 cup chicken broth or stock
- Approximately 1 cup tomato sauce or puree
- 1 1/2 teaspoons chili powder
- 1 teaspoon cumin
- 1/2 teaspoon garlic salt
- 1/2 teaspoon dried oregano
- 1/4 cup diced fresh tomatoes, seeded & drained (optional)
