The next time you have green onions, don’t throw away the white ends. Simply submerge them in a glass of water and place them in a sunny window. Your onions will begin to grow almost immediately and can be harvested almost indefinitely.

Watermelon Stroller
You’ll need:
- 1 Watermelon
- 2 Cantaloupes
- Grapes &/or cherries
- Assorted fruits balled or cut into bite-size pieces
- pacifier
- toothpicks
How to:
- Clean all fruit
- Cut an L-shape out of watermelon. You might need to slice off part of bottom so it sits flat.
- Scoop out watermelon ‘meat’, cut into chunks, reserve.
- Cut rind off cantaloupe for baby’s head.
- Fill watermelon just up to rim as in photo. Add cantaloupe.
- Use toothpicks to secure cherries or grapes for eyes.
- Cut a small hole to insert pacifier.
- Cut wheels out of other cantaloupe and secure into place with toothpicks.
- Get ready for compliments 🙂

Cheesy Zucchini Rice
You’ll need:
1 tablespoon olive oil
1 cup long-grain white rice
2 cups chicken broth
2 tablespoons butter
1 medium or 2 small zucchini, grated (I used my food processor but a cheese grater would work well, too)
1 cup shredded sharp cheddar
1/2 teaspoon garlic powder
salt and pepper, to taste
splash of milk, as needed

Oopsies – No Carb Bread
Makes 6–8 depending on size.
3 eggs
100 grams (3.5 ounces) of cream cheese
a pinch of salt
½ tablespoon fiberhusk / psyllium seed husks (can be excluded)
½ teaspoon baking powder (can be excluded)
- Separate the eggs, with the egg whites in one bowl and the egg yolks in another.
- Whip the egg whites together with the salt until very stiff. You should be able to turn the bowl over without the egg whites moving.
- Mix the egg yolks and the cream cheese well. If you choose, add the psyllium seed husk and baking powder (this makes the Oopsie more bread-like).
- Gently fold the egg whites into the egg yolk mix – try to keep the air in the egg whites.
- Put 6 large or 8 smaller oopsies on a baking tray.
- Bake in the middle of the oven at 150° C (300° F) for about 25 minutes – until they turn golden.
- You can eat Oopsies as bread or use them as a bun for a hotdog or hamburger. You can also put different kinds of seeds on them before baking them, for instance poppy, sesame or sunflower seeds. One big Oopsie can be used for a swiss roll: Add a generous layer of whipped cream and some berries. Enjoy.
