Swedish Style Meatballs

Just like IKEA!

Beef Meatballs:
  • 500 g beef or veal mince 
  • 1 teaspoon sea salt flakes
  • 1/2 small onion diced finely
  • 3 tablespoons chopped flat-leaf parsley leaves
  • 1/2 teaspoon freshly ground black pepper
  • 3 tablespoons olive, coconut or macadamia oil
Creamy Dill Gravy:
  • 100 g button mushrooms sliced finely
  • 3/4 cup beef stock
  • 1/2 cup cream or lactose-free cream
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon sea salt flakes
  • 3 tablespoons chopped dill
  • 2 tablespoons filtered water
  • 1.5 tablespoons arrowroot tapioca flour

Mustard Vinaigrette Potato Salad

Classy side dish – me likey!

  • 450 g/ 1 lb New potatoes
  • 3 tbsp Olive oil
  • 1 tbsp Lemon juice
  • 1 1/2 tsp Wholegrain mustard (Dijon can be substituted)
  • 1 tsp Yellow mustard seeds
  • 4 tsp Capers (salted, not brined)
  • 3 Spring (scallion) onions
  • 6 Radish
  • 3 Sprigs dill
  • Seasoning – to taste

Sausage, Pepper and Rice Skillet

  • 1 1/4 c. white rice
  • 2 tsp. olive oil
  • 1 (12 ounce) package smoked sausage
  • 1/2 red bell pepper, sliced
  • 1/2 yellow bell pepper, sliced
  • 1 small white onion, quartered and sliced
  • 4 cloves garlic, minced
  • 1/2 tsp. kosher sea salt
  • 1/2 tsp. ground black pepper
  • 5 tbsp. tomato paste
  • 1 1/4 c. low-sodium chicken broth, divided
  • 1 tsp. paprika
  • 1/8 tsp. cayenne pepper
  • 1 1/2 tbsp. chopped parsley

Cauliflower Parmesan

1 1/2 c. marinara sauce

1/4 c. basil leaves, torn if large
