Crunchy Shrimp with Zhoug Sauce

Love, love, love shrimp – the crunchier the better!

Crunchy+Shrimp+with+Zhoug+Sauce

  • 1 lb shrimp

  • 2 eggs (beaten)

  • 2 cups flour (season with salt, pepper and paprika)

  • 2 cups Filippo Berio Extra Light Tasting Olive Oil (for frying)

For the Zhoug Sauce

  • 1 bundle cilantro (with stems)

  • 1 bundle parsley

  • 1 bundle mint

  • 2 jalapeños or serranos

  • 2 garlic cloves

  • 1 teaspoon cumin

  • 1 teaspoon cardamon

  • 1 teaspoon chili flakes

  • juice of 1 lime

  • 3/4th cup olive oil

  • salt and pepper to taste

Mexican Street Corn Soup

I just learned about delicious ‘street corn’ recently (I know, I know – I need to get out more)… so this recipe really caught my eye!

  • 1/4 cup olive or vegetable oil
  • 6 cups fresh corn kernels , from 8-10 cobs (save 6 of the stripped cobs for simmering the soup)
  • 1 cup chopped yellow onion
  • 1/4 teaspoon ancho chili powder
  • kosher salt and freshly ground black pepper
  • 2 large garlic cloves , chopped (about 1 tablespoon)
  • 4 cups chicken or vegetable broth
  • 1/2 cup sour cream
  • 1/2 cup grated dry/aged Cotija cheese , plus additional for garnish (substitute Parmesan or Romano if Cotija is unavailable)
  • 1 tablespoon fresh lime juice
  • 1 teaspoon grated lime zest
  • 2 tablespoons plus 2 teaspoons chopped cilantro , divided
