Mandarin Pomegranate Spinach Salad
Enjoy this colorful fruity salad!

- 5 oz baby spinach
- 3 mandarin oranges (10 oz), peeled and segmented
- 3/4 cup pomegranate arils*
- 1 medium avocado , diced
- 1/4 cup sliced almonds , toasted
- 1/4 cup chopped walnuts
- 2 Tbsp white wine vinegar
- 1 1/2 Tbsp sugar
- 1/8 tsp salt
- 1/2 cup light mayonnaise (tested with Hellman’s light)
- 1 1/2 Tbsp honey
- 1 Tbsp poppy seeds
- 1 Tbsp milk , if needed
Egg and Cheese Hashbrown Waffles
Crispy delicious warm breakfast, dinner or late night snack!

- 1 20-ounce package Simply Potatoes Shredded Hash Browns
- 3 eggs
- 1/4 cup milk
- 1 cup shredded sharp Cheddar Cheese
- 1/4 cup fresh chopped chives, plus some for garnishing
- Salt & pepper
- Sour cream, for serving, if desired
Maple Braised Butternut Squash
Gotta serve this at Thanksgiving dinner!!
- 5 tablespoons butter
- 1 3 – 3 1/2 butternut squash, halved lengthwise, peeled, seeded, cut into 1-inch cubes
- 1 1/2 cups turkey broth
- 1/3 cup maple syrup
- 1 teaspoon coarse kosher salt
- 1/4 teaspoon ground black pepper
- 1 teaspoon dried thyme, to garnish
