Sticky Pineapple Chicken
BBQ Chicken Tostadas
Crispy tortillas topped with awesomeness!

- 8 tostada shells or 8 corn tortillas, brushed lightly with olive oil and baked for 3-5 minutes per side, until crispy
- 3 cups cooked and shredded chicken
- 1 1/2 cups of your favorite barbecue sauce, divided
- 2 cups shredded cheese
- 3 green onions, very thinly sliced (optional)
Chicken Cream Cheese Stuffed Croissants
Always a hit at our house!

- 2 Cans Pillsbury Croissant Biscuits ~ Or any store brand works too
- 8 oz Cream Cheese
- 2 Cups Shredded Chicken
- 2 Tbs Milk
- 1 Bunch Diced Green Onions
- 1/4 Cup Diced Green Bell Pepper
- 1/4 tsp Salt
- and Pepper to Taste
Baked Zucchini Chips
with a crispety crunchety coating!

- 2 large zucchini sliced into ¼ inch thick rounds
- 2/3 cup almond milk or milk of choice
- 1 tablespoon lemon juice
- ½ cup toasted Quinoa Flour see note
- ¾ cup Quinoa Flakes
- ½ cup crumbled rice crackers OR panko breadrumbs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- ½ teaspoon sea salt
- ½ teaspoon fresh cracked black pepper
- Olive oil spray
- Sriracha Dipping Sauce
- 1/3 cup tofu mayo or Greek Yogurt
- 1 – 3 teaspoons Siracha to taste
- 1 tablespoon fresh lime juice
- 3 cloves minced garlic
