Broccoli Salad

You need something really colorful in your diet – try this!

  • 4 cups broccoli florets; sliced
  •  1/2 medium red onion; thinly sliced
  •  1/2 cup shredded carrot; about 1 small carrot
  •  3/4 cup pomegranate arils
  •  1/2 cup dried cranberries
  •  1/2 cup pine nuts or almond slices; toasted
  •  1/2 cup pecan halves
Dressing:
  •  1 cup mayo
  •  zest of 1 lemon
  •  3 tablespoons lemon juice
  •  3 tablespoons honey
  •  1 tablespoon poppy seeds
