For The Cream Cheese Avocado Bacon Filling
- (2) 8 oz pkg cream cheese
- 3 large avocados, diced small
- 1 lb bacon, crisp and crumbled
- 1 cup Sharp cheddar, shredded
- 1 cup Pepper Jack, shredded
- 1/2 cup diced jalapenos (I used diced jalapenos from a jar)
- 1/2 cup green onions, sliced
- 1/2 cup cilantro, chopped
- 1/4 cup red onions, diced
- 1 tsp garlic salt
- 1/2 tsp Cajun seasoning
- 1/2 tsp pepper
- 1 tsp lime juice
For The Coating
- 1 cup buttermilk
- 1 egg
- 1 cup flour
- 1-2 cups Panko bread crumbs
- 2+ cups vegetable oil
