Veggie Bagel Sandwich

  • Ingredients
  • For Bagel
  • 1 cup self rising flour
  • 1 cup plain greek yogurt
  • egg for egg wash
  • For Sandwich
  • 1/2 cup plain greek yogurt
  • 2 tablespoons fresh dill chopped
  • 1 teaspoon dijon mustard
  • 1 teaspoon rice wine vinegar
  • Salt & Pepper to taste
  • Tomatoes, sliced
  • English cucumber, sliced
  • Green, red or orange bell pepper, sliced
  • Fresh spinach chopped

Crispy Spaghetti Pancake

Need to use up left-over spaghetti? Try this!

  • 3 eggs
  • 2 scallions, white and green parts, thinly sliced on a diagonal, plus more for garnishing
  • ¼ cup nutritional yeast
  • ½ teaspoon fine sea salt
  • ½ teaspoon coarsely ground black pepper
  • ½ pound whole wheat spaghetti, cooked, cold from the fridge
  • About 2 tablespoons extra virgin olive oil, for frying
  • Marinara sauce, for serving
