Onion Patties

1 cup all-purpose flour
2 teaspoons white granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons cornmeal (self-rising or regular)
2 1/2 cups chopped onions (I used 1 1/2 large white onions, chopped)
1 cup milk
1/2 cup cooking oil (I used Canola)

Homemade Egg Noodles

These low-carb egg noodles take less than 10 minutes to make – Count me in!!

  • 1 ounce cream cheese,room temperature
  • 2 eggs, room temperature
  • 1/4 teaspoon wheat gluten, may omit but it creates a better texture

Cobb Dip

  • 8 oz. cream cheese softened
  • 1 c. sour cream
  • 1 package Hidden Valley Ranch Dip mix
  • 1 c. chopped Romaine lettuce
  • 1 Roma tomato chopped
  • 1/2 c. shredded cheddar cheese
  • 1/2 c. grilled corn
  • 1/4 c. bacon cooked & crumbled
  • 1/4 c. blue cheese crumbles

Bacon Sausage and Potato Stew

Also known as Dublin Coddle… this looks really delicious!

  • 8 slices bacon, chopped into small pieces
  • 1 pound high-quality pork sausages
  • 1 tablespoon all-purpose flour
  • 1 bottle Guinness beer
  • 2 pounds potatoes, peeled and cut into bite-sized pieces
  • 2 large onions, cut into slices
  • 4 cloves garlic, minced
  • 4 tablespoons fresh minced parsley
  • 3 bay leaves
  • 1 teaspoon dried thyme
  • Fresh cracked black pepper
  • 2 cups beef, ham, or chicken broth
