Buffalo Chicken Beer Soup

Rich and warm soup to fill bellies 🙂

  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • salt and black pepper
  • 4 cloves of garlic, finely minced
  • 12 ounces light beer (like a pilsner to avoid bitterness)
  • 4 cups low sodium chicken broth
  • 1/3 cup all-purpose flour
  • 2 1/4 cups low fat milk
  • 1/4 cup Frank’s Red Hot sauce (more or less to taste)
  • 1 3/4 cup sharp white cheddar cheese
  • 1/4 cup blue cheese crumbles
  • 1 1/2 cups fully-cooked shredded chicken breast
  • croutons, chopped chives, crispy bacon, blue cheese crumbles, Frank’s Red Hot sauce (for toppings)

Homemade Spaghetti O’s

You’ll know what’s going in, when you put it in yourself!

 

  • 15oz no-salt-added tomato sauce
  • 2 tbsp milk of choice
  • 1/2 tsp onion powder
  • 1/4 tsp paprika
  • 3/4 tsp to 1 tsp salt, depending on your preference
  • 2-3 tsp butter spread, such as Earth Balance (or sub oil)
  • 3-4 tbsp nutritional yeast, or parmesan, such as vegan Parma
  • 2 tbsp any sweetener of choice, or pinch uncut stevia
  • 1 cup uncooked tiny pasta of choice

Eggplant Parmesan

  • 1 large eggplant, sliced into 1/2″ thick slices
  • 2 tbsp kosher salt
  • 1 1/2 cup Italian seasoned breadcrumbs
  • 3 eggs
  • 1/2 cup milk
  • 4 tbsp vegetable oil, for lightly pan-frying
  • 3 cups marinara sauce, homemade or store-bought
  • 2 cups whole milk mozzarella shredded
  • 1 cup parmesan cheese shredded
  • Handful of fresh basil leaves chopped, for garnish (optional)
