Italian Beef and Sausage Pie

Oh my lord – only 366 calories a serving?! OKAY, I’m in!!!

Vegetable shortening or butter to grease a 9-10 inch spring form pan (pan should be at least 2 ½ inches deep)
3 tablespoons extra virgin olive oil, divided
1 pound ground beef
½ pound Italian sweet sausage removed from casing
1 large sweet onion, diced into large half inch pieces, about 2 ½ cups
1 large green Bell pepper, diced into large half inch pieces, about 2 cups
1 teaspoon dry basil
1 teaspoon dry oregano
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
Pinch red pepper flakes
2 tablespoons fresh garlic, minced
2 tablespoons tomato paste
Batter
3 large eggs
1 cup Greek full fat yogurt
½ teaspoon kosher salt
1 ½ teaspoons baking powder
½ cup all-purpose flour
Other
1/2 cup grated Parmesan cheese
¼ pound provolone cheese sliced
1 large bunch scallions diced, about one cup
1 ½ cups mozzarella cheese, shredded

Slow Cooker Pork Loin and Pineapples

How am I supposed to stay socially distant when there’s someone making this dish somewhere in the world?!!

2-3 lb pork loin  (trimmed of excess fat)

2 tablespoons vegetable oil 

 salt and pepper 

8 cloves garlic  (minced)

1/4 cup soy sauce 

1/2 cup brown sugar 

1 23.5 ounces can pineapple chunks with juice

Sweet Potato Stew

Yummy, hearty dinner – you’ll love it!

  • 3 cups (~2 potatoes) medium-sized sweet potatoes chopped
  • 1/4 cup chopped celery
  • small yellow onion
  • 8 ounce bag mini carrots
  • 1 can (15 ounces) corn I use fire-roasted
  • 1 can (14.5 ounces) diced tomatoes I use fire-roasted
  • 1 pound beef chuck roast cut into cut into 1/2-inch chunks
  • 2 tablespoons flour
  • 1/2 teaspoon each seasoned salt and pepper
  • bay leaf
  • 1 teaspoon minced garlic
  • 1/2 teaspoon paprika
  • 1 teaspoon Worcestershire sauce
  • 2 tablespoons fresh parsley
  • beef bouillon cubes
  • 1 cup water
  • Optional: fresh flat leaf parsley

  • 4 Cups Sourdough Bread, Cubed – if using large sliced sourdough, this is about 5-7 pieces
  • 2 T Butter, Melted
  • 2 T Olive Oil
  • 1 tsp Minced Fresh Garlic or 1/2 tsp Garlic Powder
  • 1/2 tsp Sea Salt
  • 1 tsp Dried Parsley, Optional
  • 1/2 tsp Italian Seasoning, Optional
  • 1 T Parmesan Cheese, Grated
