These are an amazing app for a dinner party – or just for snacking on a Sunday!

- 1 cup drained oil-packed sun-dried tomatoes
- 1 cup loosely packed fresh basil
- 4 cloves garlic
- ½ teaspoon pepper
- ¼ teaspoon salt
- 1 (15-ounce) container ricotta cheese

- 6-10 slices of thick cut Bread (I suggest Brioche, Challah or French Bread)
- Butter fot the pan if you are not using a non-stick griddle
For the Batter
- 3 Eggs
- 3 Egg Yolk (So yes, a total of 6 eggs)
- 1/2 tsp Vanilla
- 3 Tablespoon Brown Sugar
- Dash of Nutmeg
- Dash of Cinnamon
- Dash of Salt
- 1/2 cup Cream
- 1 Tablespoon Butter

- 2 1/2 cups dry macaroni (any kind works)
- 1 yellow pepper diced
- 1 avocado diced
- 1 pint cherry tomatoes halved
- 1 red onion chopped
- 2/3 cup sweet corn kernels 120g
- 1 can black beans rinsed
- 1 cup salsa 250g
- 2 tablespoons olive oil
- 1-2 tablespoons red wine vinegar
- 1/2 tablespoon taco spices
- 1/4 cup chopped cilantro

This is a combination I could really get behind!!

- 1 lb of medium or large shrimp (peeled and deveined)
- 6 oz of pre-cooked smoked sausage, chopped (choose your favorite)
- 3/4 cup diced red bell pepper
- 3/4 cup diced green bell pepper
- 1/2 of a medium yellow onion, diced
- 1/4 cup chicken stock
- 1 zucchini, chopped
- 2 garlic cloves, diced
- Salt & pepper to taste
- Pinch of red pepper flakes
- 2 tsp Old Bay Seasoning
- Olive oil or coconut oil
- Optional garnish: chopped parsley
