  • add it to a soup
  • mix into a chicken alfredo
  • prepare a burrito bowl with it
  • make a spaghetti squash mac and cheese
  • get rid of excess waters and turn into a salad

Greek Yogurt Chicken

Low Carb – Love it!!

  • oil spray
  • 5 oz. plain greek yogurt
  • 2 tbsp mayonnaise
  • 1/2 cup grated parmesan cheese
  • 1 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1.5 lb. chicken tenders (whole) or chicken breasts (cut in quarters)
  • Parsley

Taco Truck Chili

This recipe starts with a big hunk of beef – not ground beef – and just continues to get better as you add more ingredients!!

  • 2 tablespoons olive oil
  • 3–4 pounds chuck roast
  • salt and pepper
  • 1 large onion, diced
  • 1 large red pepper, diced
  • 5 cloves garlic, minced
  • 1–2 chipotle peppers (from can of chipotle in adobo), diced
  • 2 can Rotel, undrained
  • 1 can corn, drained
  • 1 can black beans, drained and rinsed
  • 1 cup beef stock or beer
  • 1 tablespoon smoked paprika
  • 1 tablespoon cumin
  • 1–2 tablespoon chili powder
  • 1 tablespoon ground coriander
  • 1/8 cup flour

Broccolli Cheese Casserole

Keto friendlier version than what you’re used to!

1 ½ pounds broccoli florets
8 ounces cream cheese, room temperature, cut in cubes
1/4 cup sour cream
1 cup shredded cheddar cheese
1/4 cup grated parmesan cheese
2 cloves garlic, minced
1 teaspoon Italian Seasoning
salt, to taste
1/4 teaspoon fresh ground pepper, or to taste
crushed red pepper flakes for garnish, optional

Mongolian Turkey and Rice Bowls

So much flavor – gotta try this ASAP!

  • For the Turkey:
  • 2 tbsp olive oil
  • 1 lb ground turkey
  • 1 red bell pepper, diced finely
  • 1 onion, diced finely
  • 4 cloves garlic, finely diced
  • For the Mongolian Sauce:
  • 1/4 cup soy sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon sesame oil
  • 2 teaspoons white sugar
  • 1 tablespoon minced garlic
  • 1 tablespoon red pepper flakes (optional)
  • For the rice:
  • 1 cup rice
  • 1 3/4 cup water
  • 1 tsp salt
  • For Garnish:
  • green onions, to garnish
  • 1 tbsp sesame seeds
