Roasted Garlic Alfredo Tortellini

Rich and delicious!

  • 2 heads of roasted garlic
  • 2 tablespoons Pompeian Picholini Olive Oil, or sub for regular Pomepian Olive Oil
  • 1 cup heavy cream, dividied
  • heaping ¼ cup sour cream
  • ½ cup shredded Parmesan cheese + another ¼-1/2 cup
  • salt & pepper to taste
  • 1 14oz container of tortellini (refrigerated or frozen – if using frozen, cook according to directions beforehand)
  • 3 tablespoons of butter
  • parsley to garnish (optional)

Garlic Lemon Butter Salmon

1 lb salmon fillet
3 cloves garlic, minced
1 1/2 tablespoons lemon juice
1 1/2 tablespoons honey
2 tablespoons butter, melted
3 dashes cayenne pepper
1/4 teaspoon salt
1 tablespoon chopped parsley
Sliced lemon, for garnishing

Spaghetti Lasagna

A doitandhow.com original! You’ll need:

  • 16 oz spaghetti, boiled and drained
  • 1 lb hamburger, fried and drained
  • 1 Cup of cottage cheese
  • 1 egg
  • 2 cups of shredded mozzarella
  1. In a 9X13 casserole dish, spread a very thin layer of sauce. This keeps the lasagna from sticking to the pan.
  2. In the same pan you used to fry, mix the remaining sauce with the drained meat.
  3. In a small bowl, stir together the cottage cheese and egg.
  4. Layer over the small amount of sauce; half of the spaghetti and then half of the meat, spreading each layer out carefully.
  5. Then spread all of the cottage cheese mixture over. Then repeat with the remaining spaghetti and meat.
  6. It is important for all of the spaghetti to be covered or coated with some of the saucy meat – this keeps the spaghetti from getting hard on the edges.
  7. Top evenly with shredded mozzarella.
  8. Bake in a preheated oven at 350°f for 30 minutes or until the cheese is golden.
