German Chocolate Trifle

You don’t have to have German ancestry to love a German chocolate dessert!

  • 1 German chocolate cake mix, prepared in 9×13 pan according to directions (cake only)
  • German Chocolate Mousse:
  • 1⅓ cups milk
  • 2 tsp unflavored gelatin
  • 1 tsp vanilla extract
  • 8 ounces Bakers German Chocolate, roughly chopped
  • 4 cups Cool Whip, thawed
  • Coconut Pecan Filling:
  • 1 cup white sugar
  • 1 cup evaporated milk
  • ½ cup unsalted butter
  • 3 egg yolks
  • 1⅓ cups sweetened shredded coconut
  • 1 cup chopped pecans
  • 1 tsp vanilla extract

Mandarin Pomegranate Spinach Salad

Enjoy this colorful fruity salad!

  • 5 oz baby spinach
  • 3 mandarin oranges (10 oz), peeled and segmented
  • 3/4 cup pomegranate arils*
  • 1 medium avocado , diced
  • 1/4 cup sliced almonds , toasted
  • 1/4 cup chopped walnuts
  • 2 Tbsp white wine vinegar
  • 1 1/2 Tbsp sugar
  • 1/8 tsp salt
  • 1/2 cup light mayonnaise (tested with Hellman’s light)
  • 1 1/2 Tbsp honey
  • 1 Tbsp poppy seeds
  • 1 Tbsp milk , if needed

Maple Braised Butternut Squash

Gotta serve this at Thanksgiving dinner!!

  • 5 tablespoons butter
  • 1 3 – 3 1/2 butternut squash, halved lengthwise, peeled, seeded, cut into 1-inch cubes
  • 1 1/2 cups turkey broth
  • 1/3 cup maple syrup
  • 1 teaspoon coarse kosher salt
  • 1/4 teaspoon ground black pepper
  • 1 teaspoon dried thyme, to garnish
