Sesame Snaps

All good ingredients – because you add them yourself!

• 1/2 cup sesame seeds
• 1/4 cup pumpkin seeds/pepitas
• 1/4 cup desiccated coconut, unsweetened
• 2 tablespoons brown rice syrup
• 1 tablespoon honey (or maple syrup)
• 1/2 tablespoon melted coconut oil
• 1 teaspoon vanilla essence/extract

Love me some chicken salad – gotta try this version!

  • 4 pita pockets
  • 12 ounces cooked and cooled chicken (approximately 1 rotisserie chicken)
  • 1/4 cup mayo
  • 1 1/2 teaspoons red wine vinegar
  • fresh ground pepper to taste
  • medium cucumber (sliced)
  • 2 roma tomatoes (sliced)
  • 1/4 medium red onion (thinly sliced)
  • cup mixed spring greens
