1 Pound Ground Italian Sausage
1 Pound Penne Pasta
1 Tablespoon Olive Oil
1/2 Yellow Onion Minced
2 Cloves Garlic Minced
1/2 Teaspoon Red Pepper Flakes
1/2 Teaspoon Salt
2 Cups Heavy Cream
5 Ounces Baby Spinach
1 Cup Shredded Parmesan Cheese

For beef – marinated ahead of time
1/4 cup soy sauce 4 tbsp
2 tbsp sesame oil
2 tbsp maple syrup
1/2 Asian pear peeled, core removed and grated
2 scallions thinly sliced
1 tbsp garlic minced (approx 3-4 cloves)
1 1/2 lb lean beef 675g, eg sirloin tips, tenderloin
To serve
3/4 cup rice or 1 cup if you want a higher proportion of rice
4 oz cucumber 110g, cut julienne (thin batons)
1/2 tsp salt approx
4 oz carrots 110g, peeled and cut julienne (thin batons)
4 oz shitake mushrooms 110g, tough stem removed and sliced

1 1/2 C mango cut in small pcs. 3 small or 2 bigger mango, peeled and cubed
1 C red heirloom tomato seeds and water removed, the flesh cut in small cubes
1 green jalapeño chili pepper de-seeded and cut in very small pieces. if you like it more spicy, add more
2 small shallots finley cut
1 C cilantro stems and leaves finely cut stems but leaves medium
4 Tbsp lime juice more to taste
1 tsp. zest from organic lime
1/2 tsp. sea salt more to taste
1/2 tsp Aleppo pepper flakes
1 Tbsp maple syrup
2 Tbsp neutral oil like sunflower or grape seed oil

16 oz. sausage
1/4 cup flour
3 cups milk
Black pepper to taste
For the Biscuit Waffles:
(makes about 4 waffles in my big waffle maker)
2 cups flour
1 teaspoon salt 4 teaspoons baking powder
1/4 teaspoon baking soda
4 tablespoons cold butter
1 1/2 cups buttermilk
